Pinot Blanc DOC
Since 2001, Pinot Blanc has also been produced for the prestigious Sanct Valentin line. Extremely low yields from special plots guarantee a wine of the highest quality. Aged in wood, it is characterized by power and fullness as well as brilliance and a fine minerality. The longevity of this wine is also a sign of its unique quality.

HARVEST
Mid-September, harvesting and grape selection by hand.
AGEING
Fermentation, malolactic fermentation and ageing of part (50%) on the lees in barrique tonneaux. The rest is aged in large oak barrels. After almost a year, both wines are blended and mature together for a further eight months in steel tanks.
SERVING SUGGESTION
An exclusive accompaniment, ideal with fish dishes such as tuna carpaccio, octopus on potato and olive tartare, or seafood such as grilled scampi. Also goes well with asparagus and white meat. It also pairs well with typical regional dishes such as Schlutzkrapfen or spinach spaetzle.
