The Chardonnay grape variety is widely grown around the world and is also one of the winery's favorite grape varieties. This Chardonnay has been part of the prestigious Sanct Valentin line since 1986. It is grown only in small plots in the municipality of Eppan. There, a uniquely high-quality harvest ripens, which is processed into a high-quality wine full of power and elegance, characterized by a balanced acidity and excellent aging potential.

HARVEST
Early to mid-September; harvesting and grape selection by hand.
AGEING
Fermentation, malolactic fermentation, and ageing on the lees in barrique tonneaux. Blending after just under a year and further ageing for at least eight months in concrete vats.
SERVING SUGGESTION
Pairs well with hearty dishes such as fritto misto (fried seafood), porcini mushroom ravioli with cream sauce, or risotto with gray cheese and chili. Also goes well with fried chicken or Wiener schnitzel.
