Description

From the family of short oblique cut pasta, Penne Rigate are among the most famous pasta shapes and therefore the most versatile in cooking. The term Penne refers, in the Italian language, to the quill used in ancient times for writing and which was cut on the bias in order to obtain a thin point. The format, obtained from a tube of pasta, smooth or ribbed, of variable length, has the characteristic diagonal cut typical of the writing pen. Penne are one of the few pasta shapes with a certain date of birth: in 1865, in fact, a pasta maker from San Martino d'Albaro (Genoa), Giovanni Battista Capurro, requested and obtained a patent for a diagonal cutting machine. The patent was important because it allowed fresh pasta to be cut in the shape of a pen without squashing it, in sizes ranging from 3 to 5 centimeters (half-penne or penne). We read in the document preserved in the Central State Archive of Rome: "Until today, it was not possible to obtain a diagonal cut with hand scissors, a method that, besides being too slow and expensive, had the disadvantage of producing an irregular cut and crushing the pasta". Penne Rigate are perfect for the preparation of baked pasta or dry pasta seasoned with pork or beef sauces. But they are also excellent with vegetable-based sauces and more generally, thanks to their versatility, for all the recipes of the Mediterranean tradition, such as the classic condiment with tomato, basil, extra virgin olive oil and a sprinkling of Parmesan cheese. Classic is the matching with the arrabbiata sauce. Available in 500g package.
