Fresh lime puree 1kg is made from 100% lime from Mexico. 

The lime is a tropical citrus fruit, a tree of the large Rutaceae family. Its skin is fine and smooth, dark green in colour, the essence it contains is aromatic, and its flesh with green hues is juicy and acidic. Its acidity allows, among other things, for cooking tartare, ceviche and fish carpaccio. Very sensitive to cold, the lime is only cultivated in regions with a tropical climate. It is therefore in the Mexican regions that Ponthier decided to source this fruit. Mexico, the main producer of limes with Brazil, offers very aromatic and deliciously fragrant varieties. 

The fresh lime puree has a very persistent taste profile in the mouth.

How to use fresh lime puree ? 
Say lime puree and for us it is immediately Margarita, the cocktail of Mexican tradition. 
3.5 cl Tequila, 2 cl Cointreau, 1.5 cl lime juice, shake the ingredients well and pour the mixture into a cocktail glass, straining. Don't forget to sprinkle the rim of the glass with salt! 

All purees are perfect for making mousses, sorbets and ice creams, desserts, cocktails or cool drinks. Suitable for making smoothies and juices.

And to go one step further, Ponthier is launching the Live Trace project, which allows users to see orchards live via a webcam, accessible by flashing a QR code on the purees' packaging.
