Pinot Noir - Alto Adige Spumante DOC Metodo classico.
Production area:
The Pinot Nero grapes destined for the production of Pas Dosé grow on Guyot-trained vines at an altitude between 750 and 1,150 metres above sea level. The vines grow on mixed dolomite and porphyry soils. The vineyards are south and south-west facing.
Vinification:
The grapes are crushed partly whole and partly destemmed. The first six months of maturation take place in stainless steel tanks, followed by bottling (tirage) in spring. The wine then matures for about four years on the fine lees. The sparkling wine is disgorged six months before release.
Food Pairing:
This sparkling wine can be served with many dishes. As it is a pure sparkling wine made from Pinot Noir, it will probably not appeal to everyone, but especially to lovers of this grape variety.
