Description:
Among the White Condiments, the highest representation is found in the Barricato White Condiment, an emotion of aromas and flavours only made such by a skilful ageing in barriques of different woods, where the different essences are able to give the product a bittersweet taste balance and the passage of time gives it an almost unique amber colour. Balanced, structured taste with pleasant fruity nuances.

Zone:
In the province of Reggio Emilia through the use of musts and vinegars obtained from white grapes of strictly Italian origin.

Ageing:
over 12 months.

Suggestions for use:
Born as a substitute for wine vinegar and containing another percentage of must, it has a structure that allows it to enhance vegetables, salads with ingredients such as tuna, eggs or chicken, giving the dish that special sweet-and-sour taste deriving precisely from must.

Carmelina Ligabue was born in Gavasseto, a small village in the province of Reggio, in 1891.
